Solum, derived from the Latin word for "soil," represents the foundation of all great wines—its terroir. But Solum is more than just soil; it is a symbol of singularity and purity. Crafted from 100% Syrah, it stands alone, reflecting the winemaker’s vision of creating something truly exceptional.

With only a few bunches left on each vine, all the complexity and character are concentrated into these select grapes, resulting in unparalleled depth and intensity. Produced only in exceptional years, Solum is a testament to the belief that great wines are born from great foundations and that true excellence comes from standing apart.

Solum is a wine of remarkable concentration and character, crafted from 100% Syrah. Only a few bunches are left on each vine, focusing all complexity into the remaining fruit, resulting in extraordinary depth and power.

Fermented at 28°C with extended maceration, Solum achieves exceptional tannin, color, and texture extraction. Its high acidity and elevated alcohol provide the structure for decades of graceful aging.

Matured for 24 months in new French oak barrels, Solum delivers a velvety mouthfeel, rich sweet spices, and a lingering finish, blending boldness and elegance in a true masterpiece of craftsmanship.

Planted in 2004 on Calcareous Soil.

METHOD AND PRODUCTION


Bottles Produced: 240 (75cl)

After harvesting Syrah from the same vineyard used for Kiraz and Adon, a few bunches are left on the vine to produce a high-concentration Syrah with elevated sugars and acidity. The wine underwent 15 days of extended maceration, followed by aging for 24 months in new French oak barrels.

Alcohol: 15.6% ABV

APPEARANCE, NOSE & PALATE


Appearance: Deep intensity purple color, reflecting its youthful vibrancy and concentration.


Nose: Pronounced intensity with youthful, layered aromas. Primary notes include black fruits such as blackberry, blueberry, bramble, mulberry, blackcurrants, black cherry, and cassis, alongside black pepper spice, white pepper, red peppercorns, and wet stone minerality. Herbal and earthy undertones of eucalyptus and soil enhance its complexity. Secondary aromas of smoky wood, fragrant oak, incense, vanilla, cumin, cinnamon, nutmeg, and cedar are complemented by buttery and cheesy notes from malolactic fermentation (MLF). Tertiary aromas reveal caramel, dark chocolate, cooked blackberries, prunes, leather, mushroom, forest floor, and tobacco from bottle aging.


Palate: Dry with high acidity and robust tannins. A full-bodied structure with high alcohol and pronounced intensity delivers a bold, layered profile. Flavors mirror the nose, with a long, lingering finish of black fruits, chocolate, and tar, showcasing its depth and finesse.

Solum 2021 represents the winemaker’s long-held ambition to create a 100% Syrah wine, crafted from the best bunches of the vintage. This wine exemplifies power and elegance, with a remarkable aging potential. A collector’s item.

After harvesting Syrah from the same vineyard used for Kiraz and Adon, a few select bunches were left to produce a high-concentration Syrah with elevated sugars and acidity. The wine underwent 15 days of extended maceration, followed by 24 months of aging in new French oak barrels.

Alcohol: 14.5% ABV

Appearance: Deep intensity ruby color with purple hints, reflecting both youthfulness and the wine’s concentration.


Nose: Pronounced intensity with developing aromas. Primary notes include black fruits such as blackberry, blueberry, bramble, mulberry, blackcurrants, black cherry, and cassis, with black pepper spice, white pepper, red peppercorns, wet stone minerality, and earthy soil notes. Herbal eucalyptus adds freshness. Secondary aromas feature smoky wood, fragrant oak, incense, vanilla, cumin, cinnamon, nutmeg, cedar, and cheese. Tertiary characteristics from bottle aging reveal caramel, dark chocolate, coffee, toffee, carob syrup, sesame seed umami, soy sauce, dried blackberries, prunes, leather, mushroom, forest floor, tobacco, cigar box, meat, game, and barnyard notes, showcasing its exceptional complexity.


Palate: Dry with high acidity and robust tannins. A full-bodied structure with high alcohol and pronounced intensity offers a multi-dimensional experience. Flavors mirror the nose, with a long, lingering finish of black fruits and umami-rich notes, creating an exceptional depth and balance.

Planted in 1998 on Calcareous Soil.

METHOD AND PRODUCTION


Bottles Produced: 72 (75cl)

Late-harvested and meticulously fermented at approximately 26°C for seven days, this wine was then aged in a single 54L demijohn, allowing for refined development and concentration of flavors.

Alcohol: 15.5% ABV

APPEARANCE, NOSE & PALATE

Appearance: Deep garnet with a slightly bricked rim, showcasing its maturity and concentration developed through aging.


Nose: Pronounced intensity with evolving aromas. Primary notes include dark fruits such as blackberries, blackcurrants, mulberries, and dried plums, layered with black pepper, crushed red peppercorns, and earthy undertones of forest floor and dried herbs. Secondary aromas from aging in demijohn reveal subtle smoky wood, aged leather, toasted cedar, and baking spices like clove and nutmeg. Tertiary characteristics from extended maturation present notes of dark chocolate, espresso, tobacco leaf, dried blackberries, truffle, and a faint hint of game, adding remarkable depth and complexity.


Palate: Dry with high acidity and firm, structured tannins. A full-bodied profile with elevated alcohol and pronounced intensity delivers a bold yet well-integrated expression. Flavors mirror the nose, with layers of black fruit, spice, and umami-rich notes unfolding across the palate. A long, lingering finish leaves traces of black pepper, tobacco, and dried fruits, highlighting the wine’s exceptional depth and aging potential.
